Fusilli with Pistachio Pesto, gorgonzola, confit cherry tomatoes and taralli .
Let's see together how to prepare it:

Ingredients for 2 people
- 150 g of Fusilli with pistachio
- 120 g of gorgonzola
- 2 teaspoons of Pistachio Gold Pesto
- 100 g of cherry or date tomatoes
- 2 large bagels
- 2 tablespoons of milk
- the zest of a lemon
- 1 tablespoon of raw cane sugar
- 1 tablespoon of balsamic vinegar
- Evo oil, salt, pepper to taste
Preparation
Arrange the cherry tomatoes on a baking tray lined with parchment paper and season with the lemon zest, extra virgin olive oil, sugar, vinegar, salt and pepper.
Mix well and heat at 180Β° for about 30 minutes (cover with metal).
In the meantime, cook the Fusilli in plenty of boiling water and in a pan over low heat, melt the gorgonzola in two tablespoons of milk and the Pistachio Pesto.
Drain the fusilli al dente and add them to the pan with the gorgonzola. Mix well. Add the crumbled taralli, stir in a few tablespoons of oil and mix.
Serve with the confit cherry tomatoes, a drizzle of extra virgin olive oil and some more grated lemon
