Recipe: PISTACCHIO
FETTUCCINE WITH PISTACCHIO SAUCE
Ingredients (for 4 people):
- Pistachio Fettuccine 350 g
- 1 jar of Pistachio Pesto 90
g - onion 1⁄2
- cooked ham or bacon 50 g
- cooking cream 200 ml
- milk
to taste.
- butter 1 walnut
- brandy to taste
- chopped Pistachio to garnish

Method:
Melt the butter in a saucepan and brown the chopped onion.
Add the diced ham and the Pistachio Pesto.
Mix together, flame with the brandy and add the cream diluted with milk. Cook the pasta in plenty of boiling salted water and drain it al dente.
Saute Fettuccine al Pistachio in a saucepan with the sauce, pepper and serve sprinkled with chopped Pistachio.
Variation: add a teaspoon of curry to the sauce to give the dish an exotic touch.

How to use

FETTUCCINE AL PISTACCHIO CON PESTO DI ZUCCHINE E NOCI DEL BRASILE

Ingredienti (per 2 persone):
- 180 g Fettuccine al Pistacchio
- 1 zucchina gialla
- 1 zucchina verde
- 3 cucchiai Pesto di Pistacchio "Oro"
- 30 g formaggio spalmabile tipo Philadephia
- 50 g noci del Brasile
- 1 spicchio d’aglio
- olio evo, sale e pepe q.b.
- verdura disidratata e paprica per decorare.
Procedimento:
In un tegame soffriggete l’aglio tritato finemente in olio evo, sale e e pepe. Aggiungete le zucchine pulite e tagliate a rondelle e cuocete fino a renderle belle morbide (aggiungete del brodo di verdura).
Trasferite le zucchine in un mixer insieme alle noci, un goccio di brodo di verdura e il Pesto di Pistacchio e frullate il tutto fino a ottenere una crema piuttosto densa e omogenea.
Cuocete le Fettuccine in abbondante acqua bollente salata.
Nel frattempo trasferite il pesto in un tegame, aggiungete il formaggio spalmabile e amalgamate gli ingredienti a fiamma molto bassa, aggiungendo se necessario dell’acqua di cottura e mescolando delicatamente.
Scottate le Fettuccine al dente (dopo circa 7 minuti), trasferitele nel tegame insieme al Pesto e finite la cottura, aggiungendo dell’acqua di cottura.
Servite le Fettuccine belle calde, decorando con la verdura disidratata e un pizzico di paprica.
Ultimate con un giro di olio evo e qualche aroma fresco.
