MUFFINS (Hazelnut Cream and Custard Cream)
Ingredients (for 4 people):
flour 00 135 g bitter
cocoa 50 g
baking powder 8 g
1 pinch of salt brown
sugar 60 g melted
butter at room temperature 65 g
1 medium
milk egg 90 g Hazelnut
Cream 70 g custard 280 g
to taste. Method:
Pour the flour, cocoa, yeast, salt and sugar into a bowl: turn everything with a fork and remove any lumps.
In a second bowl beat the egg, add the butter, the Hazelnut Cream and the milk: mix well.
Pour these ingredients into the bowl with the flour and mix everything together with a fork.
Add the custard and mix it to obtain a soft and homogeneous dough.
Turn the oven on at 170°C, static.
Coat with paper cups a multiple muffin mould with a diameter of 6.5 cm and fill it with the dough and decorate it with hazelnut grains.
Bake and bake for 25 minutes.
Allow the muffins to cool completely and remove them from the mould.

Ingredients: Hazelnut (30%), sugar, non-hydrogenated vegetable oils and fats, skimmed milk powder, whey powder, emulsifier: soy lecithin, flavouring (vanillin).

How to use

MUFFINS ALLA DOPPIA CREMA (Crema di Nocciola e Crema pasticcera)
Ingredienti (per 4 persone):
farina 00 135 g
cacao amaro 50 g
lievito in polvere 8 g
1 pizzico di sale
zucchero di canna 60 g
burro fuso a temperatura ambiente 65 g
1 uovo medio
latte 90 g
Crema di Nocciola 70 g
crema pasticcera 280 g
granella di nocciole q.b.
In una terrina versate la farina, il cacao, il lievito, il sale e lo zucchero: girate il tutto con una forchetta eliminando eventuali grumi.
In una seconda terrina sbattete l'uovo, aggiungete il burro, la Crema di Nocciola e il latte: mescolate bene.
Versate questi ingredienti nella terrina con la farina e mescolate tutto insieme con una forchetta.
Unite la crema pasticcera e amalgamate la ottenendo un impasto morbido e omogeneo.
Accendete il forno a 170°C, statico.
Rivestite con dei pirottini di carta uno stampo multiplo da muffins del diametro di 6.5 cm e riempite con l'impasto e decorate con la granella di nocciole.
Infornate e fate cuocere per 25 minuti.
Fate raffreddare completamente i muffins e toglieteli dallo stampo.
