Our Base for Almond Gelato is a pure Paste iideal for making homemade ice cream and slushes, as well as an excellent ingredient for both sweet and savory recipes.

Our 100% Almond Cream, made exclusively with Sicilian peeled almonds, it is ideal for use in confectionery and ice cream, but it can also be used as Almond protein cream with a very intense taste.
To be used on bread or rusks, but also to give flavor to both sweet and savory dishes.
The 100% Sciara Almond Cream is an almond paste free from artificial additives, colorings and added oils, containing only peeled almonds and natural aroma of bitter almonds, which makes the taste even more intense.
100% Almond Cream, without oil, without salt or sugar.
Precious basis of many recipes, such as almond milk and the classic Border, our 100% Almond Cream preserves all the unique flavor of Sicilian almonds.

Curiosity:
The origins of the Sicilian Granita are traced back to the Arab domination in Sicily. The Arabs, in fact, brought the recipe to the island sherbet (The sherbat), an ice-cold drink made from fruit juice or rose water.
In Sicily, up until the 1960s, there was the figure of sold, the one who in winter collected the snow on Etna or on the highest mountains and who in the summer preserved it in the so-called infidelity, natural or artificial places dedicated to the conservation of snow, to then bring it to the village when needed. Indeed, in the hot summers, the sold carried the snow, covered in salt and straw to maintain the temperature, in the village with a cart so that the inhabitants could stock up on ice or prepare delicious slushes by mixing water, sugar, lemon and whipped egg white.

Shelf-life

Expiry: 24 months from the production date.
Keep in a cold and dry place.
The product will keep intact for up to 2 months after opening, provided that the above storage requirements are met.
Any presence of oil on the surface does not constitute an alteration of the product, but a natural process of separation.

How to use

Our advice for making authentic Almond Gelato with our 100% Almond Cream:
The recommended proportion is 80/100 grams of our 100% Almond Cream per 1 liter of white base.
For the white base we recommend:
- 600 ml of whole milk
- 250 ml of liquid fresh cream
- 150 g of sugar

Our advice for making the authentic Almond Granita with our 100% Almond Cream:
- 100 g of sugar
- 200 g of 100% Almond Cream
- 400 g of ice
To decorate: peeled almonds to taste
Method:
Make icing sugar, add the other ingredients and blend everything.
Decorate as desired with peeled almonds.
