GELATO AL PISTACCHIO
200 g ricotta cheese
120 g cream
180 g milk
80 g caster sugar
15 g carob fluid honey
60 g Cream 100% Pistachio without sugar (pure Pistachio Paste) pistachio
grains to taste.
In a steel bowl beat the yolk together with the sugar and honey with a hand whisk.
Add the ricotta cheese previously passed through a sieve and beat again. Add the milk and cream and mix well.
Bring the bowl on a hot bain-marie and cook the cream without ever stopping beating, for about 10 minutes bringing it to 80°C (checking the temperature with a kitchen thermometer).
Put the bowl in a cold bain-marie with water and ice (so as to reduce the cooling time) and, still stirring with the whisk, let the cream cool.
Let it rest in the refrigerator for at least 1 hour until completely cooled, then add the pistachio cream without sugar and mix again.
Put the bowl back in the refrigerator for 3 hours, then pour the mixture into the ice cream maker and stir for about 40 minutes.
Add the pistachio chips and serve the ice cream after a rest in the freezer for at least 1 hour.
